Tasting notes


pale antique pink color, creamy foam, persistent and with an excellent perlage.


notes of small fresh fruit, slightly perceptible aromatic scents of vegetable such as fennel and licorice.

Food pairing

ideal to accompany rich and tasty hors d’oeuvres of meat, cold cuts or fish. Tartare of veal or beef, rich and tasty fish, tartare of red tuna and shellfish.


The Pinot Noir grapes are harvested by hand and placed in 18 kg crates, to preserve the perfectly intact bunches during transport to the winery.
Immediately after the harvest, the grapes are cooled and subsequently de-stemmed and loaded into a special vacuum press, where the skin maceration is carried out
to extract the color of the skins; a soft progressive squeezing follows, in order to extract the best part of the juice: the free-run must, with a delicate color with light pink tones.
The presence of Pinot Noir gives this Franciacorta a particular body and vigor.
Alcoholic fermentation takes place in stainless steel tanks with constant control of fermentation temperatures. In the spring following the harvest, bottling is carried out (tirage). This is followed by an aging in contact with the yeasts for 40 months, after disgorging (dégorgement) the bottles rest in the cellar for a further 5 months.
The peculiar conformation of our bottle allows an optimal refinement between yeasts and wine.

This is an ORGANIC certified product

We only use organic farming. In fact, we do not treat our crops with synthetic molecules but only substances of natural origin. We do not use phosphate mineral fertilisers, but only organic compost, if necessary, which provides organic matter for the soil. Furthermore, we do not weed chemically but use mechanical means under the rows, a more expensive practice which is better for the soil. Lastly, we do not use synthetic fungicide but only copper and sulphur, in controlled and ever decreasing doses.
