Description
An accurate selection of Chardonnay and Pinot Noir are hand harvested and placed in 18 kg crates, to preserve the bunches perfectly intact during transportation to the winery. Immediately after harvesting the grapes are loaded into a special press running for a soft and gradual crushing, to extract the best part of the juice; the first pressing must. Alcoholic fermentation takes place in stainless steel tanks with constant temperature control. In the spring following the harvest the bottling is carried out (tirage). It is then aged for at least 30 months in contact with yeasts. After dégorgement, for this product is carried out with a liqueur d’expedition with no sugar, the bottles rest in the winery for a further 5 months.
